Dragons ('Dreki' in Old Norse) are mentioned often within Norse Mythology.

Interesting side note: Author George R. R. Martin (whose books inspired, 'Game of Thrones' and 'House of Dragons') has specifically mentioned the Icelandic sagas as a source of inspiration for his work.

Here are just some of the notable dragons mentioned in the Icelandic sagas:

Fáfnir – One of the most famous dragons in Norse literature, he appears in the Völsunga Saga and is also referenced in the Poetic Edda (especially in the poem Fáfnismál). Fáfnir was once a dwarf who transformed into a dragon to guard his treasure hoard. Sigurd (or Siegfried in Germanic versions) kills him and gains his wealth.

Niðhöggr (Níðhǫggr) – This dragon is mentioned in the Prose Edda and Poetic Edda, notably in the Völuspá (the prophecy of the seeress). Níðhöggr gnaws at the roots of Yggdrasil, the world tree, and is a symbol of destruction and chaos.

Jörmungandr – While technically a serpent rather than a dragon, Jörmungandr (also known as the Midgard Serpent) is often categorized alongside dragons in Norse myth.

Gráfnir – The Dragon in Þorsteins saga Víkingssonar – In this less well-known saga, a dragon named Gráfnir (Grani's dragon) appears as an antagonist for the hero Þorstein, who must slay it as part of his adventures.
